Super Easy Caramel Slice

Made with a “cheats” slice base and only two other ingredients this slice is firm favorite! A little different to your usual caramel slice made with a chocolate topping this slice has a cream topping and smooth caramel.

what you’ll need
1 packet no name vanilla cake mix
1 cup desiccated coconut
3/4 cup melted butter
1 tin caramel top and fill
dollop cream
strawberries to serve (optional)
Method
In a bowl mix together cake mix and coconut. Add the melted butter and mix until fully combined.
Heat oven to 180oC. Line a 28 x 18cm slice tin with baking paper. Tip the cake mixture into the pan, spread evenly and push down firmly. I use a straight edged glass to roll over the mix, compacting it more and creating a smooth surface.
Cook to 15 minutes in the preheated oven.
While it is cooking tip the “caramel top and fill” in to a microwave safe bowl. Cook in 30 second bursts, stirring in between, until the caramel smooth and liquid.
Allow the base to cool then spread the caramel over the top.
The slice will need to set, preferably overnight in the fridge before slicing.
When ready to serve, slice and top with large teaspoons of the dollop cream and a strawberry slice (if using).
Tips:
* Instead of dollop cream you can use thickened cream that has been whipped to a thick consistency. If you want a fancy finish you can pipe the cream on top or use a can of whipped cream.
