Passionfruit Slice

Made from a common “cheats” slice base this slice is quick, super easy and tastes so good!

what you’ll need
1 packet no name vanilla cake mix
1 cup desiccated coconut
3/4 cup melted butter
3 passionfruit
3 tablespoons icing sugar
1 carton (250g) sour cream (full fat)
Method
In a bowl mix together cake mix and coconut. Add the melted butter and mix until fully combined.
Heat oven to 180oC. Line a 28 x 18cm slice tin with baking paper. Tip the cake mixture into the pan, spread evenly and push down firmly. I use a straight edged glass to roll over the mix, compacting it more and creating a smooth surface.
Cook to 10 minutes in the preheated oven.
While it is cooking mix the pulp from the passionfruit and the sour cream. Taste and add icing sugar to sweeten. Depending on how sweet the passionfruit are you may not need all the icing sugar. Mix well.
When the base has been cooking for 10 minutes, remove from the oven and spread over the passionfruit mix. Return to the oven for a further 10 minutes.
The slice will need to set, preferably overnight in the fridge before slicing.
Tips:
* Don’t worry if the slice topping is still wobbly when you remove it from the oven, it will firm up when set in the fridge.
* The original slice made with this base featured tinned apples instead of passionfruit. Prepare as above substituting a tin of pie apples for the passion fruit. Sprinkle the top of the slice generously with cinnamon sugar before baking the second time.
