Macadamia Nut Slice

Crunchy caramel macadamia nuts and delicious shortbread "cheats" base, this slice is delicious! And super quick and easy!

 what you’ll need

1 packet no name brand vanilla cake mix

1 cup desiccated coconut

3/4 cup melted butter

2 tablespoons butter

2 tablespoons brown sugar

1 cup macadamia nuts, roughly chopped

Method

In a bowl mix together cake mix and coconut. Add the melted butter and mix until fully combined.

Heat oven to 180oC.  Line a 28 x 18cm slice tin with baking paper.  Tip the cake mixture into the pan, spread evenly and push down firmly. I use a straight edged glass to roll over the mix, compacting it more and creating a smooth surface.

Cook to 10 minutes in the preheated oven.

While it is cooking melt the butter and brown sugar in a pan over a low heat. Stir consistently until the sugar has dissolved. Add the chopped macadamia nuts.

Remove the slice base from the oven, pour over the caramel nut mixture then return to the oven for a further 10 minutes.

Leave to cool before slicing.


 Tips:

· Salted macadamia nuts are good as it gives the slice a salted caramel taste.

· Experiment with other nuts, cashews, peanuts or even a “trail mix”, dried fruit and mixed nuts.
