Steak and Onions with Mash

Super simple and tasty! Here succulent slices of steak and onion in a beef "jus" are severed with mash. Oh so yum!

 what you’ll need

4 pieces of steak, rump, scotch fillet (see tips).

2 brown onions

Tuscan seasoning (optional)

2 teaspoons beef stock

olive oil

Mash

4 large potatoes  peeled and cut into 2cm cubes

1/2 cup milk

2 tablespoons butter (see tips)

Method

Rinse the potatoes under cold running water, drain well. Add to a microwave safe bowl, cover and cook on high for 10 minutes (see tips). Leave covered while you prepare the rest of the recipe.

Thinly slice the  steak and the onions.

Sprinkle steak with olive oil then season very generously with salt and pepper and a small amount of the Tuscan seasoning, if using.

Add the onions to a large pan with some olive oil and fry slowly until onions are golden. Remove onions to a plate. Increase the temperature to high and then add the sliced steak in small batches, fry over high heat for 1 minute or until the steak is sealed and browned but not totally cooked through. Add to the onions.

In the mean time you can prepare the mash. Test that potatoes are very tender. Drain any excess moisture then add milk and butter. Mash well and season.

When all the steak has been cooked and removed from the pan, add ½ cup of beef stock and bring to the boil, simmer 1 or 2 minutes or until thickened slightly. Return the steak and onions to the pan and continue to heat for a further minute.

Serve immediately with mashed potato.


Tips:

· Due to the very fast cooking process good quality steak needs to be used.

· All microwaves are different so cooking time for the potatoes may vary. Depending on the type of potatoes used, you may need more or less milk and butter.
