Potato Salad

A great side dish to serve with BBQ or roasted meats as well as with cold cuts such as ham or salami. I love serving this with German style sausages and Sauerkraut for a traditional German style meal.

what you’ll need
5 large potatoes
4 hard boiled eggs
1 bunch spring onions chopped
dressing
4 tablespoons Praise mayonnaise
2 tablespoons sour cream
2 tablespoons apple cider vinegar
salt
Method
Peel and chop the potatoes into 2 cm dice. Place in a microwave safe dish and cover with water. After about 5 minutes drain the water, cover with a tight fitting lid and microwave on high for 10—12 minutes (until potatoes are completely tender).
Drain the potatoes into a colander and leave to cool completely.
Finely chop the hard boiled eggs. Add to a bowl with the mayonnaise, sour cream, vinegar and spring onions. Mix very well so that the egg is well incorporated into the dressing. Add salt to taste.
Add cooled potatoes, mix gently and top with extra spring onions.
Tips:
* This salad tastes best at room temperature so if preparing in advance, refrigerate but bring back to room temperature for 1/2 hour before serving.
