Mexican Omelet with Salsa and Sour Cream

A great midweek meal or substantial lunch, this tasty omelet only takes minutes to prepare and cook and with crunchy corn chips, melted cheese and salsa everyone will love it!

 

What you’ll need

  • 4 eggs, beaten

  • 1 red capsicum , chopped

  • 1 red onion, chopped

  • Grated tasty cheese

  • Purchased Mexican salsa

  • Corn chips

  • Sour cream

  • basil and coriander

Method

 1. Add capsicum and onion to a non stick pan with a teaspoon of olive oil. Sauté till soft and slightly coloured.

  1. Add the beaten eggs and cook until just beginning to set. Sprinkle over grated cheese and small spoonful's of salsa. Place under a hot grill until cheese has melted and eggs are set.

  2. Dollop with more salsa, sprinkle with lightly crushed corn chips and extra cheese.

  3. Return to the grill for another minute.

  4. Serve with sour cream, basil and coriander leaves.
