Fried Rice

A great side dish to serve with stir fried dishes, at a BBQ or with marinated meats, this fried rice is easy to prepare and has quite an authentic Chinese flavor.

What you’ll need
2 cups long grain white rice
1 cup frozen peas
4 eggs
4 rashers bacon
3 tablespoons butter
2 teaspoons chicken stock powder
1/4 cup oyster sauce
Method
Cook the rice in boiling water till cooked. Drain and rinse very well with hot running water. Make sure water runs clear so that the starch is removed from the rice.
Meanwhile microwave frozen peas for 1 minute. Drain.
Chop bacon into small dice and fry in a non stick pan until crispy. Remove from pan.
Whisk eggs together and cook in the same pan that you used for the bacon. Remove the omelet and chop into small pieces.
In the same pan melt the butter and mix in stock powder. Add cooked rice and stir thoroughly. Add the bacon, omelet mixture and peas. Stir to combine.
Add the oyster sauce and mix well.
Tips:
* The rice does not need to be left to dry out overnight before frying if you rinse it very well in hot water. Leave rice to drain while preparing other ingredients.
* This fried rice can be frozen for up to a month. Reheat gently in a microwave.
