Coriander Prawns

A fantastic recipe for entertaining. The spiced butter mixture is a tasty blend of herbs and spices which doesn't overwhelm the delicate prawn flavor but rather, imparts a beautiful Asian meets Indian twist to the prawns.

what you’ll need
spiced butter
3 Tablespoons butter
2 tablespoons sweet chili sauce
2 tablespoons fish sauce
2 cloves garlic (crushed)
1 tablespoon grated fresh ginger
2 teaspoons garam marsala
2 teaspoons ground cumin
1/2 bunch fresh coriander chopped
24 large green prawns shelled and deveined
8 small wooden skewers
Method
Mix together all spiced butter ingredients.
Thread prawns onto skewers and spread generously with spiced butter mix. These can be left for up to an hour (refrigerated) before grilling the skewers on a BBQ or stove top.
Skewers will take approximately 2 minutes on one side and a further 1 minute after flipping. Prawns should be pink and cooked through.
Serve immediately garnished with chopped coriander.
Tips:
* Butter ingredients can be prepared and frozen for up to a month.
* Cubed chicken breast could be used in place of prawns for non seafood eaters.
*Frozen, shelled, deveined prawns are available at the supermarket or fish monger and
make this recipe quick and easy. Defrost overnight in the fridge before patting dry with
paper towel.
