Chinese Chicken Toast

A take on the classic Chinese prawn toast, this starter is ideal for non seafood eaters.

what you’ll need
250 gm chicken mince
1 teaspoon grated fresh ginger
1 teaspoon crushed garlic
2 teaspoons soy sauce
3 - 4 thick slices white bread
Sesame seeds
Chives or spring onions
Oil for frying
Method
In a bowl combine mince, ginger, garlic and soy. Add chopped chives or spring onions, mix well.
Liberally spread the bread with the chicken mixture.
Spread sesame seeds onto a plate. Press the chicken side of the bread firmly into the sesame seeds.
Heat oil in a frying pan. Fry the bread slices, with the chicken side down for 2 minutes, or until the sesame seeds are golden, turn over and cook until bread is crisped and golden. Remove and drain on kitchen towel.
Cut each slice into 3 fingers and serve with sweet and sour sauce.
Tips:
* The chicken toast can be cooked before hand and kept well covered in the fridge. When ready to serve, place in a 200oC preheated oven for 5 minutes. Toast will be crunchy again!
* Chicken mixture can be made several hours before cooking. Add chives or spring onions just before cooking.
