Chicken and Almond Bites

These are the ultimate in entertaining finger food! They can be fully cooked and frozen before reheating. Makes life easy for a party or gathering, they are one thing that can be fully prepared and cooked in advance. Keep some in the freezer for unexpected guests!

what you’ll need

500gm chicken mince

1 cup chopped coriander

1 cup chopped basil

125gm cream cheese chopped

1/cup almond meal

Zest of 1 lemon finely grated

1 teaspoon chicken stock powder

2 tablespoons sweet chili sauce

Plain flour

Oil for frying

Extra sweet chili sauce and basil for serving

 Method

To the chicken mince add  the coriander, basil, cream cheese, lemon zest, stock powder and sweet chili sauce, mix well by hand incorporating all the cream cheese.

Roll into 3cm balls. These will be quite sticky so wet your hands and don’t try be too perfect! (when the balls are rolled in flour they will come together more). Refrigerate for 30 minutes.

Place flour onto a tray. Pick up each ball and roll in flour forming a ball.

Preheat oven to 190oC.

Shallow fry balls in oil, turning frequently so there is an even browning on all sides. Transfer to an oven  tray and bake for 10 minutes to cook through.

Serve with extra sweet chili sauce and basil.


 Tips:

 * These bites can be cooked and frozen. To reheat bring to room temperature, microwave gently until heated through and then finish in a 200oC oven for 8 minutes..
