Caramelized Onion & Feta Pizza

Something a bit different, and by using a purchased pizza base, this pizza makes a quick and tasty meal.

what you’ll need

1 purchased pizza base (there are so many good quality ones available)

1 quantity of pizza tomato sauce (I used leggos pizza sauce)

6 slices of prosciutto

100gm feta cheese

1 red onion

1 tablespoon apple cider vinegar

1 teaspoon brown sugar

salt

olive oil

salad

rocket

walnuts

olive oil

balsamic vinegar

Method 

For the caramelized onions, slice red onion finely and sauté in a little olive oil over a gentle heat. This will take about 15 minutes. When the onions are very soft, add the vinegar, brown sugar and salt. Continue to cook slowly for a further 10 minutes or until the mixture is thick and sticky. Taste and adjust seasoning.

Preheat oven to 200oC.

Spread pizza base with the tomato sauce. Dollop over the caramelized onions and torn pieces of prosciutto.  Sprinkle over the feta cheese and drizzle with a little olive oil .

Cook pizza for 15 minutes or until base is crispy.

To serve, top pizza with some of the rocket salad, serve the remaining salad on the side.

For the rocket salad, place rocket and a handful of walnuts in a bowl. Dress with a tablespoon each of olive oil and vinegar and  sprinkle with salt.

 

 Tips:

 * Onions can be prepared up to a day before.

* Pizza best served straight form the oven
